Breakfast Burrito

Ingredients

1 Tortilla

2 Eggs

3 Bacon strips

1/4 cup Red pepper, small dice

1/4 cup White onion, small dice

1/4 cup Mozzarella cheese, shredded

1 Garlic clove, minced

3/4 cup Arugula

1/2 tsp Oil

1/2 tsp Unsalted butter

Kosher salt, to taste

Fresh cracked black pepper, to taste 

Method

1. Cook bacon in a pan to your preferred doneness, then set aside.

2. In a mixing bowl, add eggs, red pepper, white onion, garlic and mozzarella. Mix well.

3 In a pre-heated pan, add olive oil and butter. Add egg mixture and cook to your desired doneness.

4. Place the tortilla on a cutting board to assemble. Add arugula as a base at the bottom third of the tortilla, then add bacon. Place the cooked eggs on top, do not overfill. Leave two inches of space around the filling, so that the burrito can be assembled easily.

5. Bring the right and left sides of the tortilla to the centre, ensuring the creases on the folds are straight. Then fold the bottom of the tortilla away from you, tucking extra filling inside as you roll it tightly into a burrito shape.

4. Using the same pan, pre-heat and add olive oil. Place seam side down and cook until golden brown on both sides, ensuring you don’t burn the burrito.

5. Slice the burrito on a bias, and serve immediately with hot sauce.
