Chia Milk Pudding with Pumpkin Seeds, Sunflower Seeds and Craisins

Ingredients

2 cups 2% Partly skimmed A2 Milk

1/4 cup Sugar

2 tsp Vanilla

2 tsp Nutmeg, grated

Cornstarch mixture

1/3 cup 2% Partly skimmed A2 Milk

1 tbsp cornstarch

Garnish

1/2 cup Chia seeds

1/2 cup Sunflower seeds

1/2 cup Pumpkin seeds

1/2 cup Craisins

2 tbsp whole Almonds

Method

  1. In a saucepan, over medium heat, add A2 Milk, sugar, vanilla and nutmeg. Heat through.

  2. In a separate bowl, mix A2 Milk with cornstarch, ensuring the mixture is smooth and without lumps.

  3. Add the cornstarch mixture to the warm milk slowly, while stirring to incorporate. Continue to boil until the mixture has thickened, without burning.

  4. Pour pudding into serving dishes and chill for a minimum of 1 hour, to overnight.

  5. To serve, garnish with chia seeds, almonds pumpkin seeds, sunflower seeds and craisins. Chill or serve immediately. #OhMAN
