Fierce Steak Stir Fry

Ingredients

2-3 tsps Fierce spice blend

½ cup Triple AAA Steak, sliced

1-2 tbsp Galangal, finely chopped

1-2 tbsp Lemongrass, finely chopped

¼ cup Heirloom carrots, sliced thinly on a bias

¼ cup Green peas

¼ cup Sugar snap peas, whole

¼ cup Chinese eggplant, cut into bite size pieces

¼ cup Red pepper, sliced

¼ cup Bok choy, cut into bite size pieces

¼ cup Scallions

¼ cup Bean sprouts

1 -2 tbsp Grapeseed oil or Vegetable oil

Salt, to taste

Black pepper, to taste

Garnish

1 - 2 tsp Scallions, sliced on a bias

1-2 tbsp Bean sprouts

1 tsp freshly squeezed Lemon juice

Method

1.  In a pre-heated pan, add oil and let it heat through. Add steak and 1 teaspoon Fierce spice blend. Cook for 2-3 minutes, avoid overcooking. Remove from heat and set aside.

2. In the same pan, add more oil as needed, then add galangal and lemongrass. Add heirloom carrots and green beans. Add another teaspoon of the Fierce spice blend.

3. Add Chinese eggplant, sugar snap peas, red pepper and bok choy. Sauté, adding another ½ to 1 teaspoon of the Fierce spice blend, as needed. 

4. Add scallions and bean sprouts, . Add the steak and the resting juices back in to finish cooking through.

5. Garnish with the remaining scallions and bean sprouts. Squeeze fresh lemon juice to finish. Serve warm. #MadLove
